Watermelon is the quintessential summer treat. Light, refreshing, and sweet, we’re lucky it’s included on BRD’s simple list of “foods you can eat”…in reasonable doses, anyway. But don’t go signing up for a watermelon eating contest just yet, mm-kay?
“Why not?” you may ask. Look, I totally understand if that’s something you’d love to do right now. Watermelon is like nature’s candy, and in the summer it’s almost impossible not to cut a watermelon in half and bury your face in its crispy-sweet goodness.
You’ll never catch us trying to convince you that something as simple and natural as fruit is bad for you. Sure, added sugars are to be avoided, but fruit is nature’s way of saying, “Sure, go ahead and indulge a little bit.” A little bit. Not like, a whole watermelon’s worth of indulgence. Because sugar, even naturally-occurring sugar, can spike your insulin levels and throw off your metabolism. To keep your metabolism humming along at top speed, BRD recommends keeping fruit and dairy to one serving per day.
But watermelon is SO. GOOD. Once you get a taste, how can we possibly expect you to put on the brakes and not eat the WHOLE DAMN THING? Amiright?
The answer, my friends, is this salad.
We want you to be a fat-burning machine, baby! So we padded the watermelon with cool cucumber, refreshing mint, and vitamin-packed pea shoots. (By the way, do you know how easy it is to grow your own pea shoots?? Not that we did, for this post, because of all of our preaching about “seriously simple,” and you know, you can just buy pea shoots at the store…but still. It’s like, throw some peas on top of dirt and wait 3 weeks. That’s it. If we ever start a “Seriously Simple Gardening” blog, the first thing I’d write about is pea shoots.) Oh, and we added just the right amount of tang by throwing some feta cheese in there for ya. Because we’re not givin’ up our dairy, neither.
A balsamic-lime dressing tops the whole thing off, and gives this salad a bright flavor that is the perfect complement to that sweet, sweet watermelon. If you’re not drooling yet, you’re not paying attention.

Don’t worry, the cucumber will barely slow you down. 😉
- 2 cucumbers, spiralized
- 3 cups of cubed watermelon
- 1 cup of pea shoots
- 4 oz. of crumbled feta cheese
- 15 sprigs of mint, minced
- ¼ cup of olive oil
- ⅛ cup ginger white balsamic vinegar
- Juice of 1 lime
- Salt & Pepper to taste
- In a large bowl add your sprialized cucumber (If you don't have one you can use a vegetable peeler to create cucumber shavings) watermelon, pea shoots, feta cheese & mint. Mix together well.
- In a small bowl whisk together olive oil, vinegar, lime juice, salt & pepper until well blended.
- Add the dressing to salad mixture and combine together.
